Blueberry Muffin

Liked the blueberry recipe from Deb Perelman (from Smitten Kitchen) since it is not quite as sweet and had lots of blueberry flavor. Making 9 is great since 12 is usually too many. The sugar on top is nice using a raw sugar like demerra or turbinado. The recipe is quick with just one bowl. It is possible to prepare the muffins in the time it takes to preheat the oven.

Ingredients

  • 70g (5T) unsalted butter
  • 100g granulated sugar
  • zest and some juice from 1/2 lemon
  • 3/4c plain yogurt or sour cream
  • 1 large egg
  • 1.5t baking powder
  • 1/4t baking soda
  • 1/4t salt
  • 1 1/2c flour
  • 1 1/4 to 1 1/2 cups fresh or frozen blueberries
  • 3T raw sugar (1t per muffin)

Steps

  • preheat oven to 375F
  • melt butter in microwave
  • in a large bowl whisk butter, sugar, lemon zest, few squeeze of lemon juice
  • whisk yogurt or sour cream and egg into the bowl
  • whisk in baking powder, baking soda, salt
  • with spatula mix in flour
  • mix in blueberries
  • prepare muffin tin with 9 liners or oil each
  • scoop into 9 muffins
  • sprinkle 1t of sugar on top of each muffin
  • bake 20-25m at 375F until toothpick comes out clean and top slightly dark
  • let cool for a few minutes then remove muffins from tin
