Cornmeal Cake with Apricot-Bay Compote

The cornmeal cake with apricot compote really appeals to me. I prefer cakes not too sweet and I really like apricots and pistachios. I usually have dried apricots and apricots around as well as unused cornmeal. We just got a vitamix blender and it does a great job of making the compote smooth.

Ingredients

  • 2 1/2, 1/2 cup finely ground corn meal
  • 5 oz, 1 cup all purpose flour
  • 1t baking powder
  • 1/8t baking soda
  • 1/2t salt
  • 5 1/4oz (3/4c) sugar
  • 6T butter melted and cooled
  • 1 egg + 1 yolk
  • 6oz, 3/4c whole milk
  • 1c dried apricots
  • 1 cup water
  • 3T honey
  • 2 large bay leaves
  • 2c whipping cream
  • 1t vanilla extract
  • 3T chopped pistachios
  • 3T confectioners sugar

Steps

  • toast cornmeal until smells just like popcorn
  • add flour and corn meal to large bowl
  • add baking powder, baking soda, salt whisk to combine
  • in separate bowl whisk sugar and egg + yolk
  • add milk and butter, whisk until combined
  • portion batter into 2 cake pans (greased) with parchment, can weight to divide evenly
  • bake 14-16m at 350
  • cut apricots in halves
  • add water and honey saucepan
  • bring to boil
  • add apricots and bay leaf
  • let simmer for 30m

apricot compote

  • remove bay leafs
  • grind apricots in food processor (or blender) until smooth
  • add heavy cream, vanilla, confectioners sugar and whip
  • let cakes cool at least 10m
  • put cake on cake stand
  • spread compote on cake

2 layers of cake with compote in middle

  • add 2nd layer, add whipped cream and top with pistachios
