I like this easy and flexible recipe from Sohla on fruit crumbles. The ratio for the filling is 10% sugar and 2% starch. The sugar can be honey or sugar. Other nice flavors are lemon zest and juice. Adding vanilla might be good also. Can also use frozen fruit as long as is fully defrosted. I prefer to reduce the sugar in the fruit and the brown sugar in the topping. We were low or oats and substituted some cheerios.

- 1000g fruit
- 100g (5T) sugar or honey
- 1t salt
- 1T lemon juice (half lemon) and zest
- 20g (2.5T) tapioca
crumble topping
- brown sugar
- 156g 1.25c flour
- 70g 2/3c oats
- 20g 1/4c black cocoa (or flour)
- 1/wt salt
- 1/2 baking powder
- 140g 10T butter
Steps
- in bowl mix fruit with sugar, salt, lemon juice, zest, tapioca
- mix with hands, taste
- add to a baking dish
- in bowl mix topping ingredients
- break up with hands
- clump and add topping over fruit
- bake for 50-60m at 375 until filling actively bubbling
