I always wondered how to make mochi since it seems very difficult. Turns out the secret is getting mochi flour. I found some at an asian market but can buy Mochika on amazon for reasonable price. The trick is dealing with the stickiness. The coconut flavor in the mochi is nice. I used a canned coconut oil and a single batch uses about half a can. The mochi can be flavored with fruit powder or cocoa powder. Also can add food coloring to change color. I prefer just plain and white color.

Ingredients
- 3/4c full fat coconut milk
- 1c water
- 1c sugar
- 1c mochi flour
- 1/2t baking powder
Steps
- whisk coconut milk and water
- add sugar and mochi flour, 1/2t baking powder
- whisk together
- put parchment in pan and spray with an oil
- place in 9x13 pan (or 8x8 can bake for 90m)
- cover with foil, bake 60m
- unmold out of pan after cools completely or even overnight
- sprinkle corn starch over mochi
- slice into pieces (wrap knife with saran to stop sticking)
- liberally sprinkle corn starch to keep from sticking
