Snow Capped Chocolate Pie

Ingredients

  • 3 egg whites
  • 1t vanilla
  • 3/4c sugar
  • 1t baking powder
  • 5oz grated sweet chocolate
  • 12 chopped dates
  • 1c ritz cracker crumbs (can use matzah meal)
  • 1/2c chopped pecans or walnuts
  • 1c medium cream whipped, with vanilla and confectioners sugar

Steps

  • mix sugar baking powder
  • beat egg whites until frothy
  • add vanilla and salt
  • add sugar, baking powder until stiff peaks form
  • grate chocolate, set aside 2T
  • combine chocolate with crumbs and nuts
  • fold into meringue combining thoroughly
  • place in greased 9” pie plate
  • bake at 350 for 25m
  • allow to cool fully
  • whip cream and sweeten, spread over merginue
  • sprinkle remaining chocolate
  • cover with saran and let cool overnight
