Snow Capped Chocolate Pie
Ingredients
- 3 egg whites
- 1t vanilla
- 3/4c sugar
- 1t baking powder
- 5oz grated sweet chocolate
- 12 chopped dates
- 1c ritz cracker crumbs (can use matzah meal)
- 1/2c chopped pecans or walnuts
- 1c medium cream whipped, with vanilla and confectioners sugar
Steps
- mix sugar baking powder
- beat egg whites until frothy
- add vanilla and salt
- add sugar, baking powder until stiff peaks form
- grate chocolate, set aside 2T
- combine chocolate with crumbs and nuts
- fold into meringue combining thoroughly
- place in greased 9” pie plate
- bake at 350 for 25m
- allow to cool fully
- whip cream and sweeten, spread over merginue
- sprinkle remaining chocolate
- cover with saran and let cool overnight
