Fruit Leather

The first part of the video shows an easy recipe for fruit leather. Our new air fryer has a dehydrate mode but seems easier to use an oven where you can use a full size cookie sheet with silicon mat. You can use the lowest setting of oven or 175. Seems like convection mode would dry the fruit faster. Making fruit leather is a good use for slightly overripe stone fruit. You can also separate the flavors by making separate batches in the blender and pouring into the pan.

Ingredients

  • 1.25 pounds fruit, plums, peaches, nectarines
  • 1/4t salt
  • 3T sugar
  • half lemon juice

Steps

  • in blender combine fruit cut into chunks, sugar, salt, lemon juice
  • good blender, like vitamix puree fruit until just a few specks of skin
  • spread onto cookie sheet with silpat mat or parchment paper
  • use offset spatula to spread into even layer
  • bake on convection 2-4h on 175 until is solid in fruit leather
  • Let cool a bit then cut into strips with knife
