Excited to try creating an herbed mayonaise coated chicken. Kenji Lopez-Alt made a youtube video describing how herbed mayo sticks to the chicken much better and gives it a nice browning.

Ingredients

- 1 whole chicken 3-4 lbs
- 1/2c mayonaise
- herbs: parsley, sage, rosemary, or anything
- 2 garlic cloves
- 1/2 t salt
- black pepper
- lemon zest
Steps
- preheat oven to 425F
- prefer to spatch-cock the chicken
- cut the backbone out then press down to flatten the chicken
- in a small bowl or mug fitting a hand blender add mayo, herbs
- add garlic, salt, pepper, lemon zest
- run hand blender until smooth
- dry off chicken, place on roasting pan
- spread mayo on both sides of chicken
- place chicken on roasting plan
- roast for 45-55m
- can take out at about 145 and let rest, to be safe can do 160, otherwise make sure rests to get to 160 to be safe
